Pop Up Dining
If you are a chef or restaurant looking to start a pop up dinner program- Tres Dallas can provide the logistical expertise for the kitchen, during the event, and pre-event planning, marketing and ticket sales. Tres Dallas can provide our own culinary team and custom menu or serve as support for your vision. If you do not have a venue, Tres Dallas can source one. Additionally, we can staff and/or organize more intimate Chef’s Table events.
Tres Dallas can customize our design for tray passed cocktail parties, in-house dinner parties and fashion shows. In addition to creative appetizers, Tres Dallas has our own mixology program, that can truly make your event unique. Our services are perfect for art openings, designer expositions and a way to wow your neighbors without the cleanup.
High End Event Management
The team of Tres Dallas is comprised of two executive chefs and an event and marketing expert. We can provide consultant services for the planning and execution of your event, menu and theme ideas, and event best practice solutions. Tres Dallas has in house equipment designed for a lean portable kitchen, and modern plate settings. Usage of Tres equipment can be written into a contract as well as complete coordination of event rentals and staffing.
Tres Dallas is looking to highlight and support the local Dallas food scene. We can be utilized for seasonal and community based events, festivals and fundraisers. Our menus can be customized to feature farm fresh produce, beer pairings and special diets. Tres Dallas Executive Chefs can operate as the featured Chef or provide technical and logistic support for chef or restaurant clients.
Vagabond Dinners & Tres Industry Nights
Our Vagabond dinners are ticketed events with cocktail and menu themes where our team really gets to flex our muscles. In true pop up fashion, the venue is unpredictable and the dining experience experimental with a focus on craft beverage service. Look for our neighborhood industry nights starting soon. As part of the hard working Dallas foodservice world, we love to give back. Join us for these industry only events at friendly hours and let us serve you.
Meet our team:
Mike Kelley, a born & raised North Texan, began his culinary career studying and working in Austin Texas. He was fortunate enough to work with amazingly talented Chefs and colleagues along the way and develop a passion for simple, honest cuisine with careful consideration of quality farm sourced products. This led to two month period of traveling in the Rhone Valley and South Eastern France working on local organic farms studying sustainable farming practices. Amidst these travels, Mike and his wife fell in love with the city of Munich and relocated there to live and work for some time. Family brought them back to the Pacific Northwest where Mike was able to work closely with an experienced beer brewing master and procure a new appreciation of the regions natural bounty. Now, after being away for some time and working a demanding job as a traveling chef, Mike has returned to his home in North Texas and hopes to take his accumulated experiences and apply them to the variety of products and cuisine that makes Texas so unique.
Tia is a Native of Washington State and US Navy Veteran. She comes to Dallas by way of Northern California. During the past 5 years, Tia has worked with beginning farmers around the States helping with training and funding for vegetable, meat, and value added product operations. Additionally Tia has run Front of House operations for pop up dinners and catering operations and truly loves working with and supporting chefs. Currently Tia represents Lone Star Foodservice in the DFW area, selling artisan meat to restaurants and high end grocers. Tres Dallas is a labor of love for three culinary professionals who want to serve great food and provide culinary solutions for businesses and individuals with similar passions.
Christopher has been a part of Tres Dallas from the beginning and while he continues to create and pursue his culinary endeavors, Chris will always be a part of the Tres family. Keep your eyes peeled and you may even catch him in the kitchen at a dinner!
Christopher is a proud, born and raised Texan. He originally studied to become a Civil Engineer at Texas A&M University, and after an epiphany, decided to leave the family profession of Engineering to follow his passion for cooking. He went on to culinary school to achieve a formal education in the culinary world, followed by obtaining a Food Science certificate from Harvard University. He has worked in just about every facet of the industry from fine dining to small restaurants and catering. He currently works for Forbes Heaver and Wallace as their Executive Chef and Equipment Specialist.
